If you are the baker of the family, you will probably have to bake your own birthday cake.
About a week before my birthday, I asked Seth if he was going to bake me a cake for my birthday.
“No, but I can have my wife make you one,” he replied.
Haha. Very funny.
My parents and brother came to visit for my birthday. My mom told me she wanted to help make me a birthday cake. I pulled out the recipe and gathered the ingredients and we got started. It soon became clear though that I was doing most of the cooking! Mom actually ended up spending most of her time cleaning up after me as I baked. Which I actually preferred, as I like baking. Cleaning up afterwards, not so much.
This cake though? Totally worth having to bake my own cake. It’s creamy homemade lemon curd layered between fluffy white cake with a lemon meringue frosting to top it off. Making the lemon curd and meringue frosting require a little extra stove-top effort, but as long as you have a good instant-read thermometer, they are pretty easy!
Baker beware though, this cake may put you in a sugar coma! I could only eat a very small slice before I started to feel like I had eaten too much sugar (although that may also have been due to all the lemon curd and frosting I ate while assembling the cake…)
