When you buy your produce at Costco, sometimes you have to be a little creative with using it all up before it goes bad!
I recently found myself with a ton of bell peppers that needed to be used. I immediately thought of making stuffed peppers, but I wanted to do something a little different than the Mexican flavored ones I always seem to make. I tried thinking of other foods that had bell peppers in them and thought of curry. So, I decided to put curry in a bell pepper, instead of putting bell peppers in curry!
The curry filling for these peppers is a slightly modified version of the Jungle-Style Curry in my favorite Thai cookbook, aptly called Simple Thai Food. The original version was full of obscure Thai ingredients that are hard to find, so I narrowed down the ingredient list somewhat, as well as changing the cooking method slightly to account for the fact that it was being used as a filling.
One less common ingredient that I left in is these cute little Thai eggplants. If you have an Asian grocery around you can find them there, but if not you can substitute an equal weight of whatever type of eggplant you can find.
Seth complained at first that these had no cheese in them (apparently stuffed peppers are required to have cheese?) but then he ate them happily so I guess the lack of cheese can’t have been too horrible!
