So I have a confession to make- despite appearances and all the crazy food on this blog, I hardly ever cook during the week. If I don’t have leftovers from the weekend I have smoothies or hummus for dinner half the time! By the time I get home from work and exercise, I am tired and too hungry to spend lots of time in the kitchen.
If I remember to plan ahead though, I love throwing food in the crockpot in the morning so that I have a hot meal ready and waiting for me when I get home in the evening. The simpler the better too, so I can manage it while I am still half-asleep!
I created this taco recipe as a way to use a jar of one of my favorite local brands of salsa, Mrs. Renfro’s. You can find it in some grocery stores (especially in the DFW area), but if you aren’t local you can buy them online too! The recipe is seriously easy though, I put a roast in the crockpot in the morning with a jar of salsa, and left it on low all day while I was at work. I got home, shredded the beef, prepped some quick-pickled onions, did some yoga, and then enjoyed my tacos!
